Warm Roasted Cauliflower & Crispy Chickpea Salad

Warm Roasted Cauliflower & Crispy Chickpea Salad.

A golden, fragrant bowl full of texture, spice, and nourishing goodness.

If you still think cauliflower is plain, this recipe is here to change your mind.

Roasting cauliflower high in the oven transforms it entirely, the edges caramelize, turning golden brown and nutty, while the inside stays tender. Paired with spiced, crispy chickpeas and fresh herbs, this warm salad is packed with texture and vibrant flavour.

It works beautifully as a satisfying main meal, a warm lunch, or a colourful side dish for family dinners.

Why you will love it:

Caramelized & nutty roasted cauliflower florets

Crispy & golden spiced chickpeas for plant protein and crunch

Fresh & fragrant with fresh parsley, coriander, and a zesty lemon dressing

What you’ll need

I’ve written this to serve four generously, with a bowl left over for lunch the next day — because cold-weather soup is always better on the second day.

Ingredients

For the Roasted Base

1 head of fresh cauliflower, cut into small, bite-sized florets

1 tin (400g) chickpeas, drained, rinsed, and thoroughly dried with a towel

2–3 tbsp olive oil

1 tsp ground cumin

1 tsp ground smoked paprika or turmeric

1/2 tsp garlic powder

Salt and freshly ground black pepper

For the Roasted Base

A few handfuls of fresh rocket or baby spinach

A small handful of fresh flat-leaf parsley or coriander, chopped

Juice of 1/2 lemon

2 tbsp extra virgin olive oil

1 tsp honey or maple syrup

Optional Toppings

A scatter of toasted pumpkin seeds or pomegranate seeds for a burst of colour

A A drizzle of tahini or Greek yoghurt mixed with garlic

Method

Prep the oven: Preheat your oven to 200°C (180°C fan) / Gas Mark 6. Line a large baking tray with parchment paper.

Season the cauliflower & chickpeas: Place the cauliflower florets and dried chickpeas onto the baking tray. Drizzle generously with olive oil, then sprinkle over the cumin, smoked paprika (or turmeric), garlic powder, salt, and pepper. Toss everything together so it is evenly coated, then spread it out in a single layer. (Tip: Don’t overcrowd the tray so everything roasts rather than steams!)

Roast until golden: Roast in the oven for 20–30 minutes, tossing halfway through, until the cauliflower is tender with dark golden edges and the chickpeas are pleasantly crispy.

Whisk the dressing: While the tray is roasting, whisk together the extra virgin olive oil, fresh lemon juice, honey (or maple syrup), and a pinch of salt in a small bowl.

Assemble: Place a bed of fresh rocket or baby spinach in a serving bowl. Top with the warm roasted cauliflower and crispy chickpeas.

Finish & serve: Drizzle the lemon dressing over the top, scatter over the fresh herbs, and add optional pumpkin seeds or a spoonful of tahini if you like. Serve warm.

A vibrant, warming dish that proves just how delicious simple plant ingredients can be.
