Demystifying the Butternut Squash

Butternut squash seems to fall into two categories for most people. You either love it… or you stare at it on the shelf thinking, “I wouldn’t even know where to begin with that thing.”

If you fall into the second camp, you are not alone. With its tough outer skin and unusual shape, it can feel a bit intimidating. But beneath that firm exterior is one of the easiest, most versatile, and naturally delicious vegetables you can cook with.

A boost for immunity and eye health

Like many bright orange vegetables, butternut squash is rich in beta-carotene, a powerful plant compound that your body converts into Vitamin A.

Vitamin A plays a vital role in supporting healthy vision, nourishing your skin, and keeping your immune system functioning at its best. It is also packed with natural antioxidants that help protect your cells and support overall everyday wellbeing.

Gentle on digestion, great for energy

Butternut squash is naturally high in dietary fibre, making it a wonderful choice for supporting healthy digestion.

The fibre content helps slow down the release of energy, keeping you feeling comfortably full and satisfied for longer without feeling heavy. It is naturally low in calories and fat, yet feels deeply nourishing and comforting, especially as the days grow cooler.

Heart health and natural hydration

What many people do not realize is that squash has a very high water content, making it naturally hydrating.

It is also a good source of potassium, an essential mineral that helps support heart health and maintain healthy blood pressure levels. It is proof that simple, whole ingredients growing in season carry everything our bodies need.

Endless possibilities in the kitchen

So, what does it actually taste like? Butternut squash is slightly sweet, delightfully soft, and deliciously creamy when cooked.

It works beautifully in soups, curries, warm grain salads, and rich pasta dishes. One of the simplest ways to enjoy it is roasted with a drizzle of olive oil and fresh herbs, woody herbs like sage, thyme, and rosemary bring out its natural warmth, while parsley and coriander offer a lovely fresh contrast.

One of my favourite ways to use it is in a warming Roast Butternut Squash & Sage Dish. The earthy, fragrant sage combined with the caramelized sweetness of roasted squash is pure comfort on a plate.

The next time you see a butternut squash sitting in the shop, don’t walk past it. It is a humble, welcoming vegetable just waiting to become a nourishing meal.
